If you ate nothing but blueberries and kale you’d starve to death.

Beef is a super-food. If you ate nothing but beef you’d be fine.

I eat beef every day because it is full of vitamins, calories, protein and it tastes great.

Cooking is not a science and doesn’t have to be.

The recipe list is a guideline, not a specific formula.

Your meal should cater to your palate, you don’t need to cater your meals to recipes.

    Go here beef made me laugh, as kids we had this old dude who used to deadlift and after each set drink a sip of protein shake and flex his back he said it helped to point the protein in the right direction ha.

  6. There’s nothing like a good ol’ steak!
    Pepper, salt, some garlic and fried in olive oil or grilled!

    • My wife cooks steaks in a pan in butter. You should try it, about a minute and a half on each side (depending on thickness), for a perfectly rare steak cooked in butter. Amazing. All you need is a bit of salt and pepper on that bad boy.

  7. Good recipe. I enjoy lots of grass fed beef and bison. One thing I do like, is ribeye steaks… 12-14 oz Seared on a cast iron pan in some butter and then in the oven for about 8 mins. Some salt and pepper and some red onions and a couple of tbsp of raw milk butter and you are good to go.

  8. What do you think about using steak instead of ground beef? Ground beef is often made of the less desirable parts of the meat, or do you find good ground beef (like on from a grass fed cow) to be just as good?

    Inner organs of animals (liver, heart, etc) are real super foods. Fruits and vegetables pale in comparison, and it’s actual meat.

    • It’s also important to note that certain nutrients (such as Vitamin A) are human-ready when obtained through animal products. Plant types tend to need conversion, so you have to eat tons more of it to get the amount a human needs.

      Leave it to the herbivores to do that conversion for us. There’s a reason carnivores tend to eat the whole animal.

  14. Always cracks me up when I hear about men trying to get their woman to cook for them. Have you seen the average woman? Whatever the hell she’s eating, I want no part of her food or her stupid Dr. Oz food philosophies.. I will cook my own food thank you very much.

        • Couldn’t agree more. Three years ago, while we were dating, I told my wife how I eat: Lots of meat (especially beef) , no simple carbs and I am not cooking it. She cooks this way every day for us. And all I think is ” this is how it should be for every man”

    Great post. I truly agree with your mentality on beef. All in all is well balanced on many primordial nutrients that out body needs. Eating a bunch of kale and bluberries definelty will not provide you with enough to survive catabolism.

    Thinking on starting the steak and eggs diet, but have had issues in the past with cholesterol.

    What is your take on that?

      There’s more to heart disease than just blood cholesterol. Read something recent about vitamin K2, I recommend the book Vitamin K2 and the calcium paradox.

    • Eggs are fine, just use an assload of egg whites and you’ll get all the protein you want for zero cholesterol.

      Don’t worry. As a biomedical scientist dealing with lots of lipid therapeutics and cardiovascular disease, I can ease your mind about that. There is still no real evidence that eating lots of red meat and eggs would be detrimental to your health, and most like will never be, as this is just BS. It is true that these foods contains lots of cholesterol, but that isn’t a bad thing, as cholesterol is the precursor for sex hormones (think T) and part of your cell membranes. the body can even synthesise it itself, since it is of such crucial importance. Secondly, when you eats lots of Chol, your body in most cases just excretes the excess. In recent years, more and more clinical evidence is published, showing that high intake of Chol and saturated fats might even be beneficial…of course, the pharma companies don’t like that, as lipid-lowering agents (especially statins) are one of the best-selling drug classes on earth, with many billion dollars of sales generated. Although these drugs indeed lower your cholesterol (and other your triglycerides), a clinical benefit in terms of reduction of atherosclerosis, stroke and myocardinfarct is still not conclusively shown - even when big pharma tries to tell people otherwise. Rather the other way round: more and more evidence shows that hi-fat/lo-carb is better than vice versa.

      On the other hand, it turns out more and more that carbs are the real enemy to your health. You should not eliminate them completely, as some paleo-freaks say, but reduce them and in term increase meat and fat, but of course high-quality, unprocessed meat.

      I don’t bother at this moment attaching links to publications, as there are many and they are probably hard to understand for non-specialists. Unfortunately for you guys in the US, the Wikipedia site for cholesterol is short; the german Wiki site for Cholesterol is far more comprehensive and gives even laymen a balanced, fair and extensive overview about the functions of cholesterol and sums up the most important studies of cholesterol and its role in cardiovascular disease.

      Bottomline: Reduce (but don’t eliminate) carbs, more good meat, fat is your friend, vegetables too, work out, but rather lift or do action things like football than running marathons.

      • Exactly. Doctor wanted to put me on Lipitor as “diet and exercise will never help in reducing cholesterol” (his words). Of course I called it BS, I didn’t take Lipitor, started exercising and eating more carefully (Myfitnesspal is a saver).
        I ate a ton of Egg whites, a lot of chicken, some beef, and some… bacon.
        Six months later my blood was back to normal, I had lost 20 or 30 lbs, and I felt like an ace.

  31. beef is the easiest food to make, I don’t understand how people struggling with it.
    Just get it to room temp, put some kosher salt on it (it helps retaining the fluids), put butter/oil in the pan (if you use butter get the grass-fed type, not the “plastic one”‘) and heat, put the meat in the pan, when blood is begins coming out from the top, turn beef. Wait a bit, touch the meat to see if it’s ready, put the cooked meat on a plate and wait five minutes. Then put whatever spice you want (pepper is enough) and enjoy. Simple and full of nutrients.

    Wish I could get easy access to quality meat here in China. It seems most of it is filled with antibiotics and other junk.

  37. Yup.. This is sort of how I found the Bold and Determined site to begin with. I was looking to change my diet to get leaner/stronger. I then found the Steak and Eggs diet here. I never looked back, Been on this site ever since. Maybe like 6 months now. Something like that. Could be more the way time goes. I used to eat WAY too many carbs. Once I went on the steak and eggs sometimes changing to chicken and eggs/beef and eggs/general protein and fat with SOME carbs the weight came flying off. When I put on the weight, that means the carbs are going up- bagels,pasta,rice. Really that simple lumped in with 3-4 days of hitting the gym. Victor, will you be doing an article on how you got so lean a couple of months back? I remember seeing you post about that.

  38. Where do you buy your meat in BKK? I’m trying to source some decent organic meat. Don’t really fancy the supermarket battery hen and beef type.

  39. Grass fed is the only way to go. Cows are ruminates and thus digest grass very easily.When they are rotationally grazed on good pastureland you end up with very healthy cows and very healthy cuts of meat. To the contrary, when they are penned and fed corn and soy silage they eventually develop gastrointestinal problems and also problems with their liver. In turn to keep them alive until slaughter they are pumped full of sodium bicarbonate and antibiotics. The end result - crap cuts of meat.laced with chemicals.
    Every year I buy a whole cow from a good friend of mine, who is a retired VT dairy farmer. Grass raised and finished throughout the whole process. The meat is damn fine. .

  47. Eat that garlic, and all the other vegtables raw. Cooking it denatures the nutrients. The benefit of this is then you start to smell like garlic, and get better nutrient absorbtion. The smell of garlic seems to repulse low testosterone haters as well.

  48. Chicken breasts in butter, olive oil and garlic, when its almost cooked you roll them in bacon and put them back in the pan until everything is cooked perfectly. then you enjoy.

  49. Random question Vic. I take it you’re familiar with fitness model Greg Plitt, as you linked a picture of him in one of your very earliest articles. In your opinion, is Greg’s physique drug-free? He’s not super huge (6’1″, 195lbs), but he’s incredibly ripped. He’s been adamant he’s never touched a steroid in his life and was in the army for years, and those guys get piss tested on the regular. And God knows he busts his ass in the gym day in, day out. Just curious what you think.
